This year, an Italian restaurant in the Palms neighborhood that serves only vegan food reopened (formerly non-veg). It offers spaghetti, pizza, salad, soup, and dessert, all of which are vegan. There are many things to choose from, like spinach salad, eggplant Parmesan, cheese pizza, and chicken marsala. This small, simple room with just one table where people can sit together. Instead of using heavy sauces to make the ingredients taste better, like many "cheat" vegan dishes and recipes, this one only uses the freshest ingredients. Pesto was out of this world, cashew cheese was melty and delicious, and the toppings were crisp and fresh.
