Chef Matthew Kenney worked with HRH Prince Khaled bin Alwaleed bin Talal Al Saud's KBW Ventures to develop the idea for Folia. "From the leaves" is where the name of the idea comes from in Latin. In the resort, there is a garden where people can eat food made from only plants. Folia's mission is about much more than just making tasty food from plants. We aim to promote healthy eating in Dubai and worldwide through this amazing partnership with the skilled team at Four Seasons. On our journey to change the future of food, we're about to start an exciting new chapter. The menu, which has some of the most colorful dishes I've ever made, is a part of that journey.
