Regenerative medicine is the branch of medicine specializing in replacing, engineering, or regenerating human cells, tissues, or organs.
The work I’ve done in regenerative medicine has been 100% focused on inflammatory illnesses and we have been able to prove how the body can diminish inflammatory biomarkers to regenerate.
Nutrition by itself has proven over and over again that cardiovascular diseases, cancer, and inflammatory-based diseases can be positively impacted by adopting a plant-based diet. Even though both practices might not seem to be linked, I’m constantly reminded about our body’s ability to heal itself!
This is one of the best-kept secrets in medicine. Both stem cell or regenerative medicine and Plant-based nutrition optimise the human body’s natural ability to heal itself.
For me, it is leading by example! I prove daily that living a compassionate life works not only for my medical career but also for every aspect of my life as an athlete, mother, dancer, and leader. We are all on our journey, and my goal is to educate anyone who wants to listen to simple tips.

And what a beautiful road we built!! A hard-working “young” Latina immigrant, redefining medicine, running clinical trials, and navigating approvals with the FDA and CDC only proves that if there is a will, there is a way.
My commitment to innovation not only stays at the bench or in my research; I’m so lucky to live in this generation where plant-based food has spiked the interest of many chefs around the world. I’ve made it my priority to ensure that I travel to different corners of the world seeking the best vegan food, and it never disappoints.
I’ve learned that our fashion statements can impact environmental and animal welfare, and so I’ve switched my mentality in that sense. I love promoting lifestyle changes within my community. I know change is scary, but if we incorporate just a few more fruits, veggies, whole cereals, nuts, and seeds into our plates daily, big changes can happen in our health.
Frozen Ezequiel bread for breakfast is my go-to! I add tofu slices or a “Just Egg” patty and eggplant with any greens, sprouts, tomatoes, and spices for a yummy morning sandwich. I always snack on smoothies with vegan protein and all the berries; lupini beans are my absolute favourite mid-afternoon snack, or nuts and fruits. Lunch and Dinner always include a salad/whole grain bowl and some pasta with veggies.
I've been vegan for 31 years, so I have barely any knowledge of what it was like to be non-vegan. I love to live this compassionate life and prove everyone wrong! I’m not a weak, thin human, so watch me lift heavy weights and defy gravity on my paddle board.
It always comes down to going out to eat with family and friends, but I have a hack for that! 10 years ago, I hired a coach to train me on my macros for getting leaner and gaining muscle mass. That adventure lasted 3 years, and after that time, I learned some valuable lessons: I love pasta & bread and how much protein I needed to add to my daily life to continue seeing results.
Until today, every time I go out for lunch or dinner, I always take a 4 onz container packed with tofu, tempeh, seitan, quinoa, and faux meat. I even travel overseas with an adequate amount of containers and vegan proteins, so I never have to deal with the “problem” of not finding food! Every single restaurant in the world offers some kind of salad and vegetable side dishes with my classic requests: I have a dairy allergy, and please let me know if they use any animal stock to cook the vegetables; for my salads, always dressing on the side, and end of the story, I don’t even disclose that I’m vegan!

As I mentioned before, a prepared vegan is a happy vegan! I love food! So I’m never going to ruin a get-together with my friends or family just because of my compassionate living.
Offer to bring a couple of side dishes so everyone can taste what vegan yummy food tastes like. Bring your little stash of healthy food. Another great tip is to put hemp seeds in a small ziplock bag, and my discovery is Puris Pantry: Organic Pea Protein Crisps! Just sprinkle away, and you will be guaranteed full and satisfied.
I’ve taught my daughter from an early age always to eat the rainbow daily! So, I asked her which colors she eats daily. Most importantly, kids learn by watching and repeating, so there are no special secrets here; Mommy has to eat the rainbow, too!
I’m always open if people have questions. Still, I’m often showing my community how easy it is to live a compassionate lifestyle and lift heavy weights, eat the rainbow, LOTS OF PROTEIN and practice paddleboard yoga in the ocean, be an entrepreneur, and take clients for dinner without ever compromising my commitment to ahinsa “do not harm.”
The reason why women are more open to this lifestyle is because we are born with more awareness of being compassionate, so our motherly nature aligns with this way of living. I see too often people ashamed of not being able to stay vegan after they want to give it a try.
To them, all I want them to remember is to continue trying to incorporate the rainbow into their diets; as a physician-scientist, I’m obligated to emphasize the importance of eating whole foods: fruits, vegetables, nuts, seeds, whole grains, legumes. 8 out of the 10 most common killers for humans are related to nutrition, so feeding your gut microbiome fiber is the key to feeding the anti-inflammatory microbiome.
